What size tires?
I have a Kandi KD250 that is pretty much all stock (for now). The stock rear tires are 22x11-10. I would like to go up to 25" tires (like on some side by sides) for more ground clearance but am wondering 1) how much pier will I lose from going up in tire size and 2) do the bolt patterns on these wheels usually match up to the pattern on buggies? Any advice?

First just measure the bolt pattern horizontal, vertical, and diagonally to make sure the rims you choose will fit. Next realize that you are going to loose some of your "get up and go" when you bolt on a larger size tire W/O some performance upgrades!

lug patterns on that bug is 4x137mm on the rear, 4x110mm on the front. you should have no problem finding rims that size. on the rears sometimes they will be listed on line as 4x136 but it's the same thing. Bear is right though you will need to make some changes if it's stock. you'll want to reclutch and coax as much power as possible if you want to move those bigger tires. i recommend 15G rollers or 17g sliders yellow or even a red torgue spring in the clutch. yellow or sometimes white springs are referred to as med or 1500rpm springs. although the rpm rating isnt completely accurate. red would be the stiffer or 2000rpm spring. adding a uni filter pod and getting rid of the stock airbox will help as well as a rejet and an exhaust to help the motor breathe. beyond that your into motor work.
